06 - 2 tablespoons olive oil
07 - 1 teaspoon balsamic vinegar
08 - ½ teaspoon dried thyme
09 - ½ teaspoon dried rosemary
10 - ½ teaspoon sea salt
11 - ¼ teaspoon black pepper
→ Garnish
12 - 2 tablespoons crumbled feta cheese (optional)
13 - 1 tablespoon chopped fresh parsley
# Directions:
01 - Set the oven to 400°F and line a baking sheet with parchment paper.
02 - In a large bowl, whisk together olive oil, balsamic vinegar, dried thyme, dried rosemary, sea salt, and black pepper.
03 - Add carrot, bell peppers, zucchini, and parsnip sticks to the marinade and toss to coat evenly.
04 - Place vegetable sticks on the baking sheet in parallel pairs, alternating colors to resemble sleigh rails.
05 - Bake for 20 to 25 minutes, turning once halfway through, until tender and lightly caramelized.
06 - Transfer roasted vegetables to a serving platter. Top with feta cheese (if using) and sprinkle with fresh parsley. Serve warm or at room temperature.
