# Directions:

01 - Preheat oven to 400°F. Slice tops off garlic bulbs to expose cloves. Wrap each bulb in foil, drizzle with olive oil, and seal tightly. Roast 35-40 minutes until golden and soft.
02 - Allow roasted garlic to cool slightly. Squeeze cloves from skins into a bowl and mash into a smooth paste.
03 - Boil pasta in salted water according to package directions. Reserve 1/2 cup pasta water before draining.
04 - Heat 2 tablespoons olive oil in a large skillet over medium heat. Add chopped onion and sauté 5 minutes until translucent.
05 - Stir mashed roasted garlic into skillet and cook 1 minute until fragrant. Add diced tomatoes, basil, salt, pepper, and red pepper flakes. Simmer 8-10 minutes.
