08 - 1 1/2 teaspoons baking powder

# Directions:
01 - In a large bowl, whisk together ricotta, milk, egg yolks, vanilla extract, and melted butter until smooth.
02 - In a separate bowl, whisk together flour, sugar, baking powder, and salt.
03 - Add the dry ingredients to the wet mixture and stir until just combined; a few lumps remaining is acceptable.
04 - In a clean bowl, beat the egg whites until soft peaks form.
05 - Gently fold the whipped egg whites into the batter using a spatula, taking care not to deflate the mixture.
06 - Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.
07 - Pour 1/4 cup of batter per pancake onto the pan. Cook for 2 to 3 minutes until bubbles form and edges are set. Flip and cook an additional 1 to 2 minutes until golden and cooked through.
08 - Serve immediately with maple syrup, fresh berries, or a dusting of powdered sugar.
