  • For the Filling: 5 6 ripe plums pitted and thinly sliced, 3 tbsp clover honey (plus extra for drizzling), 2 tbsp turbinado or demerara sugar, 1 tbsp cornstarch, 1/2 tsp vanilla extract, 1/4 tsp ground cinnamon, Pinch of salt
  • For Assembly: 1 egg beaten (for egg wash), 1 tbsp turbinado sugar (for sprinkling), Fresh clover blossoms or edible flowers optional

Instructions

Prepare the crust:
In a large bowl whisk together all-purpose flour almond flour sugar and salt. Add cold butter and use a pastry cutter or fingertips to work into the flour until the mixture resembles coarse crumbs.
Mix egg yolk:
In a small bowl whisk the egg yolk with 3 tbsp ice water. Drizzle over the flour mixture and stir until the dough just comes together adding extra water as needed. Shape into a disk wrap and chill for at least 30 minutes.

Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
Prepare filling:
